From our Fans: Kitchen Sink Chili (Traditional Chili Recipe)

One of our Instagram followers posted a really delicious-looking chili to Instagram not long ago, and we love it when people tag us in their very own VitaClay creations. So we asked her to write out the recipe for us to share with everyone. We tried it and we think it’s a pretty great recipe as well. Here’s what she wrote:

“Chili is a favorite in my household. Everybody loves it, especially when the weather is cooling off outside. It’s hearty, warm, comforting, and delicious, as well as super filling.

I call it “kitchen sink chili” because I just throw in whatever I have on hand. Leftover chicken? Sure! Cut up veggies that haven’t gotten used for anything else? No problem! Half a jar of salsa that isn’t getting eaten? Toss it in! Butternut squash, pumpkin, ground pork—all go great in chili!

The basic recipe is very simple and is delicious all on its own, but I love to scrounge around my pantry and fridge to find ‘extra’ ingredients that can make it just a little bit different from last time. I think that’s what is great about chili. It can be customized however you like—anything goes!”

Ingredients for Basic Chili:

  • 1 can kidney beans
  • 1 can black beans
  • 1 can pinto or great northern beans
  • 12-16 oz strained tomatoes
  • 3-8 c broth (depending on size of pot)
  • 1.5 lb ground beef or other meat
  • ½ c chopped celery
  • 1 c chopped onions
  • 1 chopped bell pepper
  • ½ c chopped jalapenos or other spicy peppers (optional)
  • 1 c chopped carrots or other veggies (corn, peas and other mixed veggies can add good flavor!)
  • 1 packet chili spices (about 3 T)
  • Real salt & pepper to taste
  • Garlic powder or other no-salt spices

Directions for Basic Chili:

  1. Add all ingredients into VitaClay cooker (I don’t drain beans)
  2. Stir, breaking up the ground meat as much as possible
  3. Set to “soup” or “slow” for 1 hour
  4. Open and stir, checking the chili. It’s ready to serve now, but cooking longer will further blend the flavors.
  5. Serve with a garnish of grated cheese and sour cream.

It’s literally that easy, and so good! This huge pot of chili will feed your family for days! Serve with a side of crusty sourdough bread or even over rice or pasta for a full meal!
