Creamy, Delicious, Healthy Cauliflower Soup Cooked in Clay (Dairy Free!)

This soup is white and very creamy and smooth. You’d never guess that it doesn’t contain cream or any dairy! The trick is that the cooked cauliflower and onions blend so smoothly that it truly looks, tastes and feels like creamy soup when you eat it!

So this recipe is great for people who can’t tolerate dairy or have dairy restrictions for other reasons. Because dairy intolerance or not, who doesn't love a nice warm creamy soup? And now that I think about it, what if I wanted to sub this cauliflower and onion mixture for cream in other recipes? It could work! Clam chowder, cream of mushroom… the possibilities are endless! Give it a try and let us know what you think!

  • 1 large head of cauliflower, chopped (~2lb)
  • 2 carrots, peeled and diced
